  • Old Overholt Bonded and Cornell and Diel Eight State Burley!

    • Interesting things about the distillery:
      • Said to be America's oldest continually maintained brand of whiskey, it was founded in West Overton, Pennsylvania, in 1810.
      • Old Overholt is a rye whiskey distilled by A. Overholt & Co., currently a subsidiary of Beam Suntory, which is a subsidiary of Suntory Holdings of Osaka, Japan.
      • It is currently distilled at the Jim Beam distillery in Clermont, KY
      • Henry Oberholzer (Anglicized to “Overholt”), a German Mennonite farmer, moved to West Overton, Pennsylvania, on the banks of Jacobs Creek in Western Pennsylvania in 1800. His family came from the area of Germany which specialized in distilling “korn”, or rye whiskey, and Henry took up the tradition.
      • In 1810, Henry’s son took over the management of the distillery and made it into a business.
      • By the 1820s, the distillery was putting out 12 to 15 gallons of rye whiskey per day.
      • By 1859, Overholt incorporated his business as “A. Overholt & Co.” He operated out of a new distillery building that was six stories high, 100 feet long, and which could produce 860 gallons per day.
      • Old Overholt was one of six distilleries allowed to continue issuing bottled-in-bond, government stamped, pints with a dosage cup atop the cap and doctor’s prescription attached to the back.
        • Maybe because Andrew Mellon was a partner in the business and he was the secretary of the treasury under Harding
        • Mellon Sold his shares in 1925 due to concerns from prohabisionists
      • Beam bought out the old overholt in 1986, when they made the purchase of Dekuyper Peachtree Schnapps. This was during a time when brown liquor was frowned upon and clear liquors were in.

    • Interesting things about the distillery:
      • Tony is a retired pharmacist and had no distilling experience when they started
      • In 2016, the owner said they were working on a vodka, but didn't have any interest in whiskey’s
      • In 2021, they met Jeremy Quinn, who became master distiller and will be the successor of the business
      • Today, it makes about 25,000 bottles a year
    • Our Bottle: Daufuskie Low Country Bourbon
      • Came out in 2019
      • Claims high corn and very low rye content, and is 3 3-grain

    • Interesting things about the distillery:
      • Expanded in 2023 and now makes about 2000 bottles a year
      • Pot still only
      • Uses Bloody Butcher corn
        • Low yield, about 25% less
      • A “Liberty Pole” was kind of like a banner posted by the Mingo Creek Society to protest the excise tax imposed on whiskey to help pay for the War of Independence
    • Whiskey Rebellion
      • Hamilton Vs Jefferson
        • Hamilton wanted a stronger federal Government and felt the nation should assume the debt from the states from the war
        • Jefferson believed the states should act more independently and pay their own debts
        • Hamilton was the Treasury Secretary and won the battle
      • Excise Whiskey tax of 1791
        • Taxed the production of whiskey, not the sale
        • Remained the law until Jefferson repealed it in 1802
      • The effect in Western PA
        • Western PA was mainly a grain economy. Many people were paid in grain, and it was easier to transport whiskey over raw grain
        • Whiskey was a way of life, and everyone drank it as it was safer than water, a lot of times
      • The battle
        • Only one small skirmish
        • Washington himself led about 13,000 troops against the few thousand rebels.
          • The only time a sitting president ever was on the battlefield leading troops
        • Rebels disbanded after seeing the force
      • The ending
        • Only 2 people were charged with treason, and both were pardoned by Washington
        • MANY of the rules of protest we think about today were established here, as well as thoughts on free speech

      • Ryan is from the military and Holly worked with airlines
      • Ryan is also a glassblower
        • Names of the bottles are based on glassblowing items
        • Didymium is a purple filtering glass that glassblowers wear to protect their eyes, filtering out all the other bottles on the shelf
        • The Gaffer collection is their limited release, and a Gaffer is the head glassblower
          • The First batch just released includes 20% Amaranth which is similar to wheat
      • VERY Small production. You can join the founders club on their website to help them grow and purchase a distillery

    • Based out of Utah
    • High West Distillery was founded in 2006 by David Perkins and his wife, Jane. David, a former biochemist, was inspired to open his own distillery after seeing the parallels between the fermentation and distilling process and his own work in biochemistry during a trip to a whiskey distillery in Kentucky.
    • High West began with humble roots, opening a small, 250-gallon still and Saloon in an historic livery stable and garage.
    • Started with sourced but are now phasing that out with blending their own with the sourced to finish up the sourced

      • Proximo Started the brand, Spinoff of stranahan which was purchased in 2010
      • Named after a mining town in colorado and for the tin cups that people drank from
      • Partners with stranahan Distillery
      • Is fully marketed as an outdoor brand, to the point where their website is more a gear site than a whiskey site in a lot of ways
      • Jess Graber first was a co-founder to stranahans, and branched out ot tincup to go a more bourbon direction
        • Was a volunteer firefighter and responded to a barn fire at George Stranahans place.
        • He distilled at stranahans
    • Our Bottle: the original
      • Mashbill is high rye, made with corn, rye, and malted barley
        • Blend of bourbon (64% Corn, 32% Rye, 4% Malted Barley) and single malt whiskey (100% Malted Barley)
        • We dont know how much single malt, but we know it isnt a lot
