Luigi Cornaro (1467-1566) mourut à l'âge de 99 ans, chose rare à une époque où l'espérance de vie ne dépassait guère les 35 ans dans les classes les plus aisées de la population. Chez les plus pauvres, celle-ci n'atteignait même pas les 20 ans. Cornaro, qui connut des problèmes de santé aux alentours de la quarantaine suite à de nombreux excès, eut l'intuition qu'un régime alimentaire stricte lui permettrait de vivre en meilleure santé et plus longtemps.
