In my 40 years of seed to table experience I have heard so many restaurants ask for help. They hire consultants and pay thousands of dollars, here comes the crazy part, they are not willing to listen or change anything. I will caution you on this, you have to be willing to experience change and try new things, at least be willing to test the theories and ideas.
