Nothing says “proudly Okinawan” like Okinawa soba. This delicious noodle variety from the southern prefecture of Japan is not related in any shape or form to Nihon soba (buckwheat noodles) from the Japanese mainland. Despite the confusing name (or perhaps because of it) and complicated origins, it’s a must-try must-eat must-like for any visitor to Okinawa, both domestic and foreign.
