Today I want to talk about profit. Not the calculation. The concept.

Food businesses tend to measure profit the same way. What came in, minus what went out, whatever remains. It is a reasonable calculation, and it is one part of a larger picture. When profit is whatever remains after everything else has happened, it is shaped by everything else.

This episode is about the operators who decide before the month begins what the business needs to generate, and build pricing, purchasing, labor, menu construction, and portion standards around that target. Profit as something earned, rather than found.
