    The Original Mai Tai from Cabana Bar and Beach Club (Dolphin) and Splash Pool Bar and Grill (Swan) - Joe

    2 ounces Myers’s Rum (Sub for Trader Vic’s Dark) 1 ounce fresh squeezed lime juice ½ ounce Orange Curacao ½ ounce Orgeat ¼ ounce simple syrup Add crushed ice, then shake well for around 10 seconds. Pour unstrained into a double old-fashioned glass. Sink your spent lime shell in the drink.

    The Gin Bramble - Gary

    2 shots of Citadelle Gin 2 ounces gin 1 ounce fresh lemon juice ½ ounce simple syrup (see note) ½ ounce crème de mûre. Feel free to sub Chambord

    In a cocktail shaker filled with ice, shake together the first three ingredients and strain into a rocks glass filled with crushed ice, mounded high. Drizzle crème de mûre over the top and garnish with a slice of lemon
