In the series finale, Dr. Elena Berg speaks with Jan Bender, the small water farmer behind Denmark’s Iskilde, and water sommelier Michael Tanousis of Aqua Amore. Jan reflects on source stewardship, the challenges facing independent producers, and how water experiences can help people value a resource they often take for granted. Michael explains the differences among table water, spring water, and natural mineral water, how to interpret mineral information on a label, and how minerals shape texture and taste. He also introduces aquaminerology, his developing system for a clearer and more consistent language of water tasting.
