You step on the scale, see the same old number, and then open your closet to find your pants no longer fit the way they used to. You haven't gained weight, yet you take up more space. If your weight hasn't changed in years but your clothes feel tighter, you're not imagining it: something inside you has changed, and the scale isn't measuring it. What has changed is your body composition. Over the years, lean mass is replaced by fat, and every kilogram exchanged takes up about two hundred milliliters more space—roughly a small glass of water—without adding a single gram to the scale. In 2002, a research team at Tufts University in Boston measured 131 people and measured them again nine and a half years later. On average, the men's weight changed by just a hundred grams. Beneath the surface, however, they had lost well over a kilo of lean mass and gained a kilo of fat. And that fat isn't distributed evenly. It infiltrates deep between muscle fibers—where it can't be pinched or seen—and accumulates around the waist. A team at the National Institute on Aging used scans to measure this in over 1,600 people: over five years, those fat deposits grew by nearly ten percent annually in people whose weight stayed the same.
