  • This Scientist Studied Eyesight for 25 Years. The Breakthrough Came From a Flower. With Professor John Nolan
    2026/10/23
What if you woke up one day and couldn’t read the words on your phone screen? That’s what happened to Food Heals host Allison Melody recently when her vision suddenly became blurry and garbled. Although her vision returned to normal, the experience sparked a question: What can we do now to protect our eyesight for the future? An estimated 19.8 million Americans age 40 and older were living with age-related macular degeneration in 2019. But one scientist says a key to protecting our vision lies in nature. Professor John Nolan has spent more than 25 years researching carotenoids—plant pigments that help protect our eyes and support brain health. His message goes beyond “eat your vegetables.” It’s about understanding which nutrients we need, how our bodies absorb them, and why targeted nutrition can offer something a healthy diet alone doesn’t always deliver. In this episode, Allison sits down with Professor Nolan, the scientist featured in the documentary A Vision for Vision, to explore what his research reveals about nutrition, eyesight, and healthy aging. Recorded at The London West Hollywood before the film’s screening, this conversation takes us from marigold fields in Mexico to the research lab—and into the personal story of Nolan’s mother, whose experience with macular degeneration made his scientific mission deeply personal. As founder and director of the Nutrition Research Centre Ireland, Nolan explains the protective pigments in our eyes, why seeing clearly means more than reading an eye chart, and how his research expanded from vision into brain health and Alzheimer’s disease. In this episode, discover: • The three carotenoids that make up macular pigment: lutein, zeaxanthin, and meso-zeaxanthin• Why getting nutrients into your body—and into the tissues that need them—are different parts of the puzzle• The role of marigold-derived carotenoids in targeted nutritional supplementation• Why 20/20 vision doesn’t tell the whole story about how well you see• What contrast sensitivity reveals about the quality of your vision• How macular pigment functions as a light filter and provides antioxidant protection• Why Nolan’s mother became “Patient Zero” in the documentary• The connection between his eye research and his work on cognition and Alzheimer’s disease• How two-time Emmy Award-winning filmmaker Wayne Chesler brought this scientific journey to the screen Learn more about Professor Nolan and where to watch A Vision for Vision:https://profjohnnolan.com Love this episode? • Doing Everything “Right” and Still Feeling Sick? Become the CEO of Your Health with Amanda Soukoulis
    2026/10/11
What do you do when your labs look “normal,” but you feel anything but? Amanda Soukoulis was a Dallas Cowboys Cheerleader finalist with a thriving career in private equity. From the outside, she looked like the picture of health. But in her mid-20s, her energy crashed, brain fog stole her focus, and she gained 35 pounds despite no changes to her diet or workouts. After spending $70,000 searching for answers, Amanda discovered gut dysfunction, mold exposure, and postmenopausal estrogen levels. Being dismissed by doctors became the turning point that led her into functional medicine and nutrition, first to understand her own body, then to help others. In this episode of Food Heals, Allison Melody sits down with Amanda to explore her recovery journey, the connections between gut health and hormones, and the role peptides played in her experience. In this episode, we cover: • Why “normal” labs don’t always explain persistent symptoms• Amanda’s journey through fatigue, brain fog, bloating, and hormonal imbalance• How stress, nervous system regulation, and sleep fit into the bigger health picture• What Amanda discovered about mold exposure and her gut health• Her experience with peptides and why testing, sourcing, and individualized guidance matter• Her U3 framework: Uncover, Uproot, Unleash• What it means to become the CEO of your own health If you’ve ever been told everything is fine while knowing something feels wrong, this conversation will remind you that your experience deserves to be heard, and that asking more questions can be the beginning of a new chapter. • At 22, He Couldn’t Feed Himself. Then One Doctor Changed Everything: Miguel’s Chronic Fatigue Recovery Story
    2026/10/03
At 22, Miguel Bautista was so sick that his 75-year-old grandmother had to feed him and help him bathe. He experienced debilitating fatigue, brain fog, heart palpitations, and extreme sensitivity to light and sound. After seeing dozens of specialists, his tests kept coming back normal. He was a medical mystery, and no one seemed to have answers. Eventually, he landed in the ICU and was ready to give up. Then a psychiatrist reviewing his records identified something the tests hadn’t revealed: his nervous system was stuck in survival mode. Learning to regulate it became the turning point. Within a month of working with that doctor, Miguel went from bedridden to walking on his own and leaving the hospital. Today, he exercises, travels, and helps others navigate their own recovery journeys. So what did that doctor see that everyone else had missed? In this episode of Food Heals, Allison Melody sits down with Miguel, founder of CFS Recovery, to explore his experience with chronic fatigue and the turning point that helped him rebuild his life: understanding his nervous system and learning to move out of survival mode. Miguel shares the three pillars he teaches, why constantly pushing harder can backfire, and how he approached symptoms with less fear. Allison opens up about her own experience with functional freeze after losing her parents, financial security, and sense of safety. She also shares how her rescue beagle Dolly is learning to feel safe, one small experience at a time. In this conversation, we explore: • Miguel’s journey from being bedridden to reclaiming his independence.• The frustration of feeling seriously unwell while tests show nothing abnormal.• Fight, flight, freeze, and what it can feel like to stay in survival mode.• Miguel’s three pillars: understanding what’s happening, responding to symptoms, and gradually building capacity.• Neuroplasticity, repetition, and the practice of creating a sense of safety.• Why community and support matter when recovery feels lonely.• The resources Miguel offers people navigating chronic fatigue, long COVID, and related symptoms. Plus, Miguel shares a free Recovery Roadmap Protocol for Food Heals listeners, including his Recovery Stage Identifier and a personalized recovery report.
