In the first episode of UNKUT by Khannas, the Khanna brothers sit down with chef, restaurateur and entrepreneur Raphael Duntoye.
Raphael shares the story of how he became what he calls an “accidental chef” - from studying engineering and working as a kitchen porter, to training under legendary chef Pierre Koffmann and eventually becoming chef patron and founder of LPM.
He talks about bringing LPM to Dubai, the importance of produce and consistency, his decision to leave after 15 years, and the challenge of starting again with his new restaurant, Gio Gio's, in Milan.
