(Also yes I did do the research: Turns out, for jerky you do want really lean slices of meat with as little fat as possible cause it just has a bad texture when jerkified. However! I (Editing Sam) was not entirely wrong, because when normally smoking meats (like birsket!) you do want the fattier pieces as they'll render down and create a juicier, more flavorful piece of meat. So. That's the down low on different meat types and smoking for you, our faithful jerky enjoying listener. That's all folks, I gotta get back to editing this episode now byyyyye)
