For Black Americans, the food system is broken. When it comes to nutrition, Black consumers experience an unjust and inequitable distribution of resources. Black Food Matters examines these issues through in-depth essays that analyze how Blackness is contested through food, differing ideas of what makes our sustenance "healthy", and Black individuals' own beliefs about what their cuisine should be.

This volume will revise the way we look at the modern populations of Latin America and North America by providing a totally new view of the history of Native-American and African-American peoples throughout the hemisphere. American Apartheid shows how the Black ghetto was created by Whites during the first half of the 20th century in order to isolate growing urban Black populations. It goes on to show that, despite the Fair Housing Act of 1968, segregation is perpetuated today through an interlocking set of individual actions, institutional practices, and governmental policies. In some urban areas the degree of black segregation is so intense and occurs in so many dimensions simultaneously that it amounts to "hypersegregation".
