Does it have a reputation for quality and professionalism?
Check their thinking ability.
Give them a problem and ask them to articulate out loud their thought process in solving it.
Give them a task and check their speed of execution.
Does it match the pace of the company?
Review their past experiences to see how that has shaped them.
Check their interest in the company and dig into why they want to work there.
