After returning to the United States, Kay transitioned into entrepreneurship, building a career in health insurance and later expanding into wellness education—helping people understand how diet, inflammation, and lifestyle choices impact long-term health.

Now in her seventies, Kay continues to share her knowledge about vitality, aging, and personal responsibility for health. She believes that by making intentional choices—about food, mindset, and daily habits—people can dramatically improve their quality of life.
